Ingredients:

5 lb. lutefisk
Creamy white sauce:
5 tbsp. butter
5 tbsp. flour
2 1/2 c. milk
2 1/2 c. half and half
1 tsp. salt

Directions:

Soak lutefisk in cold water for one hour; drain well. Preheat oven to 400º. Put lutefisk in an enamel roaster (others will stain) with rack in the bottom. Salt slightly. Do not add water; it will steam in its own juices. Cover roaster with heavy foil and then put the roaster cover on. Place in preheated oven for 20 min. If it is fork tender, it is done, and 20 min. usually does it. Serve with melted butter or Creamy White Sauce.
For sauce: Melt butter and add flour. Stir until well blended. Add milk and half and half gradually. Cook in double boiler, about 10 min., or until thick, stirring constantly.
